Vegetarian Chipotle Burrito Bowl Recipe

Ingredients:

• 2 cups cooked brown rice
• 2 cups cooked black beans
• 1/2 cup diced red onion
• 1/2 cup diced bell pepper
• 1/4 cup corn kernels
• 1/4 cup diced tomatoes
• 1/4 cup shredded cheese
• 1/4 cup chopped cilantro
• 1/4 cup guacamole
• 1/4 cup sour cream
• 2 tablespoons olive oil
• 1 tablespoon chili powder
• 1 teaspoon garlic powder
• 1 teaspoon ground cumin
• Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.
2. In a large bowl, mix together cooked rice, black beans, red onion, bell pepper, corn, tomatoes, cheese, cilantro, guacamole, sour cream, olive oil, chili powder, garlic powder, cumin, salt, and pepper.
3. Spread the mixture onto a baking sheet and bake for 25 minutes, or until the vegetables are cooked through and the cheese is melted.
4. Serve in individual bowls and enjoy!
